Paneer Bhurji is a breakfast recipe popular in the north of India . It is a medley of cottage cheese aka paneer , sautéed with onions , tomatoes and spices garnished with coriander leaves. This is eaten as is or along with toasted bread. Since paneer is loaded with good amount of calcium and proteins , makes it an ideal breakfast. Kids who are fussy about food would tend to love this !
If you are the one who likes making fresh paneer , then follow my recipe below for a creamy textured paneer.I font like store bought paneer and prefer to make my own paneer . And it cannot get as easy as this , just takes about 15 mins for whipping up the paneer and stand time of about 1-2 hours. I prefer to make the paneer night before and stash it in the refrigerator to firm up really well. The paneer sitting in the refrigerator cuts up really well and is more stable to handle. 150 gms Paneer , crumbled
1 big Onion , chopped finely
1 Tomato,big chopped
1 teaspoon organic Turmeric
1 teaspoon Cumin Powder
1 teaspoon Mustard Seeds
1 teaspoon Red Chilli powder
2 tablespoons Fresh Coriander, chopped
salt to taste
- in a hot pan add oil.
- add mustard seeds and as they start to crackle add onions and sauté until the colour changes.
- add turmeric , red chilli powder and cumin powder. Sauté and add chopped tomatoes 🍅.
- let it cook for a few mins and then add crumbled paneer.
- add salt and chopped coriander.
- mix well and serve immediately as is or serve it with toasted bread.
