coconut cupcake haven


As the name suggests, its pure heavenly indulgence if you are a coconut lover.Coconut is such a versatile ingredient that it adds lots of texture and taste to anything it goes into.


Coming to the end of another great year and at the threshold of a new year with new challenges and new hopes.Its been a great year for us as we welcomed a guest into our family 🙂 It our little christmas present !! Its been a roller coaster ride since then and the elder one felt a bit left out {sibling rivalry I guess 🙂 } .Its just been 15 days since the arrival of the new one and as we both are getting adjusted to the the new world , I baked these cupcakes for the the big brother. His joys knew no bounds as he enjoyed the cake and felt secure that his mom is still going to be around him as well 😉 . I could not have imagined making a post now, but this was something that turned out so delicious that I had to squeeze out some time for this.

Since I am quite immobile now , I wanted to bake something using the ingredients that I had at home. So this was the perfect recipe from the book Vegan with a Vengeance by Isa Chandra. The cake was moist and full of nutty flavour. Its an amazing keepsake recipe.


Makes 10 big cupcakes

1 cup plain flour {will try substituting with wheat flour next time}
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup canola oil
1 cup coconut milk
2/3 cup sugar
1 tsp vanilla extract
1 cup shredded coconut, fresh or dry
{I have used dry coconut}


  1. Preheat oven to 180 degrees.
  2. Sift the flour, baking powder, soda and salt.
  3. In another bowl combine the oil, coconut milk, sugar and vanilla.
  4. Pour the dry ingredients into the wet and mix until smooth.
  5. Fold in shredded coconut.
  6. Pour mixture into cake tin or cup cake moulds and bake for 30-40mins or until a toothpick comes out clean.
  7. Once cooled use frosting to decorate or just enjoy it plain.
