khichidi & gatte ki kadi {rice & lentils, chickpea flour & yoghurt curry, gluten free}

A spoonful of Kichdi and Gatte-ki-Kadi , it’s an awesome combination for a day’s meal. It’s a comforting everyday food in many North Indian states. It’s similar to the Bisi-bele-bhat of Karnataka and Pongal of Tamil Nadu.

There are different ways of making a Kichdi. Some are made very thin like gravy or dry like pulav. What could be more comforting than having warm rice with some gravy! This is a very simple, easy and wholesome dish which I make once a month at least. It can be prepared with different combinations of vegetables or sometimes when you run out of your veggies stock, this can be good choice. The sourness in the curds/yoghurt is what gives the kadhi a twist.

It’s always a good thing to have a variety on your menu. Then you have more choices. After all variety is the spice of life!

Ingredients for Kichdi
Serves 4
3/4th cup Rice
1/4th  cup Moong Dal
3 cups Water
1 Onion minced
1 Carrot diced
8 -10 nos Beans diced
1 Green chilli split
2 tbsp Ghee/Clarified Butter
{you can use oil as well,but traditionally kichdi is made using Ghee}

For Seasoning
1/4th tsp Mustard seeds
1 tsp Cumin seeds
3 nos Cloves
3 nos Cardamom
4 cm Cinnamon
Salt to taste

Method for making Kichdi

  1. Wash rice and dal together and drain the water.
  2. Heat Ghee/Clarified Butter in a big cooking pot/pressure cooker.
  3. Add mustard seeds. When they begin to crackle add cumin , cloves, cardamoms and cinnamon.
  4. After a minute add green chillies and onions.
  5. Fry till brown.
  6. Add the vegetables and rice.
  7. Add water and salt. Give it a stir.
  8. If using a pressure cooker then give about 2 whistles and if you are using a cook top then , need to cook until the water evaporates and the rice should not stick to each other.

Ingredients for Gatte

1 cup Besan
1 tbsp Oil
1/2 tsp Red Chilli powder
1/2 tsp Soda
2 big pinches Ajwain
Salt to taste

Method for making Gatte

  1. While the rice is being done, in another bowl mix all the above ingredients for Gatte.
  2. Add little water to it and form a soft dough.
  3. Divide the dough into five parts and roll it into 1 cms thick rolls.{as shown in the above picture}
  4. Similarly make rolls using rest of the dough.
  5. Arrange it on a plate and steam it.
  6. To steam , use a big cooktop. Add 2-3 cups of water and let it boil. Keep a small bowl in the pot for support and place the gatte plate on it. Cover and steam it for about 15 mins.
  7. Once done remove it and allow them to cool completely.
  8. Cut them into round disks. Set it aside.
  9. If you like the gatte’s to be crisp toss them in a tablespoon of oil and fry them till they are crisp. This is an optional step.

Ingredients for Kadi

1/2th cup Curds/Yoghurt
1/2 tsp Turmeric
3 cups Water
1 tsp Sugar
3 tbsp Besan
1 tsp Red chilli Powder
Salt to taste

Seasoning
1 tsp Oil
1 tsp Cumin Seeds
1 tsp Mustard Seeds

Garnishing
Coriander leaves

Method for making Kadi

  1. Mix all the ingredients for kadi to form a paste.
  2. Heat oil in a pan and when its hot add mustard and cumin seeds.
  3. Add the kadi paste and cook continuously for 5-10 mins.
  4. Keep stirring so that no lumps are formed.
  5. Remove from fire and garnish with fresh coriander leaves.
  6. Just before serving add the gatte on top of the kadi.
  7. Serve hot with Kichdi.
