
Badam Burfi or Almond Burfi – Almonds cooked to perfection with sugar and saffron and set into delicious squares !

Ingredients
Makes 20 small ones
1 cup almonds
1 1/4 th cup sugar
Big pinch saffron
1 1/4 th cup milk
5 tablespoons ghee/clarified butter
Hot water to soak almonds
Method
- Soak almonds overnight to plump up and drain water.
- Pour hot water and soak the almonds for about 1 hour .
- This helps to remove the outskin .
- Or , if you are hard pressed for time , boil almonds in water for about 15 mins.
- Cool and remove the skin.
- Soak saffron in milk for 10 mins.
- After removing the skin, transfer the peeled almonds to a blender.
- Add little milk and grind to a smooth paste.
- In a thick bottomed pan , add the almond paste, sugar , rest of the milk and ghee.
- Switch on the flame , cook on medium heat while stirring continuously until thick.
- The flame should always be medium and keep stirring to avoid burning.
- When the mixture starts to thicken , add 2 tablespoons ghee.
- Cook until the mixture starts to leave the pan.
- Transfer the mixture to a greased plate.
- Spread the mixture evenly.
- Allow it to set for 20 mins, and then mark the squares.
- When cooled completely , it can be removed and stored in an airtight container.
Note : if after cooling, the burfi has not set , then transfer it to the pan and cook for few more minutes. Then set it again.
