Badam Burfi or Almond Burfi – Almonds cooked to perfection with sugar and saffron and set into delicious squares ! 

Badam Burfi

Makes 20 small ones

1 cup almonds
1 1/4 th cup sugar
Big pinch saffron
1 1/4 th cup milk
5 tablespoons ghee/clarified butter
Hot water to soak almonds

Badam Burfi


  • Soak almonds overnight to plump up and drain water.
  • Pour hot water and soak the almonds for about 1 hour .
  • This helps to remove the outskin .
  • Or , if you are hard pressed for time , boil almonds in water for about 15 mins.
  • Cool and remove the skin.
  • Soak saffron in milk for 10 mins.
  • After removing the skin, transfer the peeled almonds to a blender.
  • Add little milk and grind to a smooth paste.
  • In a thick bottomed pan , add the almond paste, sugar , rest of the milk and ghee.
  • Switch on the flame , cook on medium heat while stirring continuously until thick.
  • The flame should always be medium and keep stirring to avoid burning.
  • When the mixture starts to thicken , add 2 tablespoons ghee.
  • Cook until the mixture starts to leave the pan.
  • Transfer the mixture to a greased plate.
  • Spread the mixture evenly.
  • Allow it to set for 20 mins, and then mark the squares.
  • When cooled completely , it can be removed and stored in an airtight container.

Note : if after cooling, the burfi has not set , then transfer it to the pan and cook for few more minutes. Then set it again.
